’Tis the season for bubbles—and this tasting celebrates Champagne in its most refined and expressive forms. We’ve selected a quartet of truly artisan, highly coveted bottles that showcase how dramatically terroir, varietal composition, and technique shape character and complexity. These are not mass-produced Champagnes; they are distinct narratives in the glass—rare, pedigreed, and crafted with intention.

J. Lassalle Brut “Preference” Premier Cru
A longtime favorite, proudly run by three generations of women. This Premier Cru blend (60% Pinot Meunier, 20% Chardonnay, 20% Pinot Noir) is sheer and delicately nuanced, with tiny, dancing bubbles—perfect as a refined aperitif or mood-setter.

Gonet-Medeville Brut Blanc de Noirs, Premier Cru
100% Pinot Noir from the Médeville family’s Premier Cru and Grand Cru holdings, delivering finesse, balance, and elegant structure with impressive lineage.

Pierre Paillard Brut “Les Parcelles” Grand Cru
Typically 70% Pinot Noir and 30% Chardonnay, barrel fermented and oak-aged, offering depth, richness, and unmistakable Grand Cru presence.

TALK STORY & TASTING WITH SUPERSTAR RAJAT PARR

At Sera, we kick off the New Year with a “talk story” wine tasting featuring the world-renowned former iconic sommelier (for the Michael Mina group), award-winning author, wine marketer, and now prolific winemaker/grower—Rajat Parr. He is one of the most widely recognized figures of the new generation. 

His high-profile career has spanned a couple of decades, and he has now become a visionary farmer and game-changing leader in the world of winemaking. 

We will be tasting four of Raj’s wines—three from Phelan Farms (his project with Gary Phelan on the extreme San Luis Obispo coast, just three miles from the ocean) and one from Brij (a wine project he named after his father). Each of these wines reflects his core values of “nothing added, nothing taken out,” and features grape varieties such as Chardonnay, Pinot Noir, and Gamay Noir, along with lesser-known varieties like Savagnin and Gringet (most notably from Savoie, France, and championed by the wine master Ganevat).
